MINI PIZZA WITH SACHA INCHI FLOUR

Ingredients:

  • 300 g wheat flour
  • 100 g sacha inchi flour
  • 200 ml warm water
  • 10 g dry yeast
  • 15 g sacha inchi oil
  • 7 g salt
  • 5 g sugar or honey
  • 250 g mozzarella
  • 8 tbsp pizza sauce
  • 2–3 tomatoes
  • Fresh basil leaves

Steps:

  1. Activate yeast in warm water with sugar or honey.
  2. Sift flours with salt. Add yeast mixture and oil.
  3. Knead, divide and refrigerate for 12 hours.
  4. Roll out into pizza bases. Prebake if desired.
  5. Add sauce, cheese, and tomatoes. Bake 10–12 min at 220 °C.
  6. Top with fresh basil once baked.
